After moving from POSTMAN to Insomnia I made the change to Hoppscotch but there is something about it that I don't like and I don't know what it is...
Is there any other free worth trying?

Bruno (www.usebruno.com) is pretty good. Not as perfect as Insomnia used to be but better than the Insomnia of today.

Trying Bruno @Juje. might migrate to it since Postman requires online access (which is so annoying honestly)
